20 sauces that will make your dishes tastier than in a restaurant

The simplest dish can sound in a completely new way as a duet with an original sauce. Complete them with meat, chicken, fish or vegetable snacks. Traditionally, certain types of sauces are selected for a specific recipe, but it is best to focus on your own taste. Master each of these recipes, and you will be recognized as the best culinary specialist in the company.

Turkish Spicy Sauce

Perfectly sets off meat and any chicken dishes. This recipe is simple and very quick.

You will need:

  • Two onions;
  • 1 tomato (you can replace with a tablespoon of natural tomato paste);
  • 1 sweet pepper;
  • 2 tablespoons of olive oil;
  • salt;
  • red and black pepper;
  • a teaspoon of lemon juice or vinegar;
  • coriander, coriander, chopped greens

Put vegetables and herbs in a blender and chop. Add butter, salt and spices. Put the sauce in the fridge for half an hour so that it is infused.

Spanish Salsa

  • 15-20 cherry tomatoes (can be replaced with three juicy tomatoes with dense pulp);
  • spring onions;
  • dill;
  • garlic clove;
  • a spoonful of tomato paste;
  • olive oil;
  • balsamic vinegar;
  • salt and pepper to taste

Grind tomato and greens in a blender. If you prepare the sauce in the winter, it is better to remove the peel from the tomatoes. To do this, hold them for a few seconds in boiling water, after making a small incision on the skin. You can chop the tomatoes with a knife. Add butter, pasta, vinegar and spices.

Andalusian Sauce

You will need:

  • 3 tablespoons of ketchup or tomato sauce;
  • 150 grams of mayonnaise;
  • bulb;
  • spoonful of lemon juice;
  • Red pepper;
  • 1 teaspoon brandy

Chop the onion with a knife or chop it in a blender. Add it to a mix of mayonnaise and ketchup. Squeeze the juice from half a lemon into the sauce. Add salt, spices and brandy. Cover the sauce with the lid and refrigerate for an hour.

Classic Mushroom Sauce

Suitable for potato dishes, pasta, dumplings and meat.

You will need:

  • 200 grams of fresh mushrooms (preferably mushrooms or white);
  • 1 large onion;
  • 100-150 grams of thick cream;
  • salt, pepper to taste

Finely chop the onions and mushrooms and simmer together under a closed lid. 5 minutes until ready, pour in the sour cream, add salt and pepper. Let the sauce cool slightly and chop in a blender until creamy.

Honey mustard sauce

The sauce can be served to prepared dishes of lean meat or chicken, or used as a marinade.

You will need:

  • 100 grams of mustard;
  • 50 grams of liquid honey;
  • ginger root

Grate ginger or chop in a blender. Mix honey and mustard. Ginger add to taste. The sauce can be slightly salted.

Creamy Cheese Sauce

A great addition to potato dishes, pasta and fresh vegetables.

You will need:

  • 200 grams of cream;
  • 200 grams of melted or cream cheese;
  • 50 grams of cheese, which is dissolved in milk;
  • 10 grams of vegetable oil;
  • black pepper;
  • dried basil

Heat the cream and add cream cheese and little to it. Bring the sauce to a boil, stirring occasionally with a wooden spatula. Put the saucepan on a slow gas, add the spices and grated hard cheese grated on a fine grater. Please note that only varieties that are dissolved in milk and not coagulated, such as Gouda, will suit you.

Garlic Sause

A popular summer sauce that can be made in a few minutes.

You will need:

  • Sour cream;
  • garlic;
  • dill;
  • salt pepper

Peel the fennel off the thick stalks by selecting the greenest and most succulent twigs. Chop the dill with garlic, and add the sour cream. Salt the sauce to taste and add black pepper.

Bechamel Sauce

It is traditionally called the classic white sauce. It fits almost any dish.

You will need:

  • 2 cups of milk or low-fat cream;
  • 3 tablespoons of butter (if you use cream, you can take less oil);
  • 2 tablespoons of wheat flour;
  • salt;
  • nutmeg

Heat the flour in a dry frying pan and add butter.Fry a little flour. In the saucepan, boil the cream or milk, and then pour them into the flour. Continuously stirring the sauce, bring it to a boil. Wait until Bechamel thickens, and then salt it and add a pinch of nutmeg.

Italian tomato sauce

It goes well with pasta dishes, pizza and pita bread.

You will need:

  • Large onion;
  • a couple of garlic cloves;
  • jar of tomatoes in their own juice;
  • spoon of olive oil;
  • 2 tablespoons of tomato paste;
  • Italian herbs;
  • 4 tomatoes;
  • salt pepper;
  • spoon of sugar

Blanch fresh tomatoes to easily peel and seed them. Fry onion and garlic in olive oil. Add crushed origano, basil and marjoram (you can take only one of these spices). Smash canned tomatoes with tomato paste in a blender and send them to the sauce. Add sugar and salt, and add fresh tomatoes at the very end of cooking, so that they are only slightly warmed.

Cream and mustard sauce

Perfectly complements the dishes of fish, chicken breast and beef.

You will need:

  • 200 grams of low-fat cream;
  • 5 teaspoons of mustard;
  • juice of lemon or lime;
  • coriander seeds;
  • mustard grains (can be replaced with mustard with grains);
  • greenery;
  • salt

Warm up the cream in the saucepan. If you are using mustard seeds, warm them in a dry frying pan with coriander. Add the mustard and seeds to the cream, and squeeze the juice of half a lemon or lime into a saucepan. When the sauce thickens, put chopped greens in it and salt.

Tartar sauce

You will need:

  • 3 tablespoons sour cream;
  • 3 tablespoons of mayonnaise;
  • pickled or pickled cucumber;
  • parsley;
  • garlic clove;
  • a teaspoon of lemon juice;
  • a mustard spoon;
  • spoon of capers (optional);
  • salt and pepper

Chop the salted or pickled cucumber, parsley and capers. Crush garlic in a garlic press or rub it on a fine grater. Add everything to the mix of sour cream with mayonnaise, add lemon juice, mustard, salt and pepper. Put the sauce infused in the fridge for half an hour.

  • 2 tablespoons of olive oil;

  • tablespoon flour;
  • parsley;
  • spoon of sugar (for sour wine);
  • salt pepper

Finely chop the onion and fry in half the olive oil until golden brown.Make a paste from the second part of the butter and a spoonful of flour and add to the onion. Add wine and water and let the sauce boil. At the end of cooking, add the chopped parsley, salt and pepper. If your wine was dry, the sauce may be a little bit sour. Adjust it with sugar.

Barbecue sauce

Good complement kebab and grilled chicken.

You will need:

  • 200 grams of tomato paste;
  • 50 grams of butter;
  • 1 onion;
  • 2 tablespoons of liquid honey;
  • lemon juice;
  • salt pepper

Instead of tomato paste, you can use tomato sauce or ketchup. Pass the onion in butter (you can replace it with vegetable, but then the sauce will not thicken). Pour ketchup or tomato paste, lemon juice, honey, salt and pepper to taste. If the sauce is too thick, dilute it with water. Leave the sauce in the fridge to thicken.

Sweet and sour sauce

Suitable for Asian recipes and any meat dishes.

You will need:

  • 2 tablespoons of vinegar;
  • 1-2 tablespoons of sugar;
  • a spoonful of tomato paste;
  • spoon of soy sauce;
  • 3 tablespoons of orange juice;
  • a teaspoon of corn flour

Mix sugar, vinegar, tomato paste, soy sauce and orange juice.Corn flour diluted in water to a state of slurry, and only then add to the rest of the ingredients. Bring the sauce to a boil.

Caesar Sauce

The traditional dressing for the famous salad is good in and of itself.

You will need:

  • 150 grams of olive oil;
  • 1 yolk;
  • spoon soft mustard;
  • a teaspoon of lemon juice;
  • 50 grams of hard cheese (preferably Parmesan);
  • black pepper;
  • anchovies and capers (optional)

Scrunch the cheese on the smallest grater. If you have anchovies and capers, chop them. Mix olive oil with yolk, mustard and lemon juice and beat this sauce well. Add pepper, cheese and pasta from anchovies and capers.

Beetroot Sauce with Horseradish

Traditional sauce for Russian cuisine. It can be stored in the refrigerator for a long time.

You will need:

  • 1-2 beets;
  • horseradish root

Grate the horseradish on a grater, and dilute it with beetroot juice. Before use, the sauce can be diluted with sour cream or mayonnaise.

Curry Sauce

It will impart to any dish of oriental color. You can use it as a basis for vegetarian dishes.

You will need:

  • 1 large onion;
  • a couple of garlic cloves;
  • a glass of vegetable broth;
  • a spoon of vegetable oil;
  • 2 tablespoons of curry powder;
  • a teaspoon of lemon juice;
  • a teaspoon of mustard;
  • a tablespoon of cream

If you cook a vegetarian or vegan dish, use vegetable broth and soy cream. Chop and fry the onion and garlic in butter. Add a spoonful of flour and bring the sauce to a uniform consistency. Pour in the broth, add the curry and simmer for 5 minutes. Then add mustard, lemon juice and cream.
