Basic rules for storing cheese

If you love and often buy cheese, you just have to learn how to store it properly, because it will help not only prolong the “life” of the product, but also not spoil its taste.

Where to store?

All types of cheeses are stored exclusively in the refrigerator. At room temperature, the bacteria multiply very quickly in this product, so it will simply deteriorate. In addition, in summer the cheese may partially melt, and re-cooling will spoil the taste and structure.

The ideal temperature for storing cheese is 1-7 degrees. At a higher level, bacteria will begin to multiply, and at a lower one, the taste may suffer.

What to store?

In stores, cheeses are sold wrapped in cling film. This protects them from airing, but completely blocks the access of oxygen, and such a product must "breathe". But what to do, so that natural breathing is not disturbed, nor is cheese curdled?

It is best to wrap it in parchment. This material will prevent airing and at the same time provide access to oxygen.In order to avoid the ingress of bacteria into the product from the external environment, it should be wrapped in several layers of parchment. And that the packaging was reliable, the edges can be fixed with adhesive tape or stickers.

All that was written above, refers to the usual hard cheeses. Cheese with mold smells rather starkly, and so that this "aroma" does not spread throughout the refrigerator, they should not only be wrapped in parchment, but also cleaned into a container, and preferably not plastic, but glass. Glass plays the role of a barrier and does not release absolutely any substances into the environment. You can also buy a special "cheese".

As for the cheese and soft cheeses, they are best stored in the brine in which they were sold. If the container is a plastic container, then send the product in the fridge directly in it. If the cheese in brine is enclosed in a soft package, then it should be moved together with the liquid to another container with a lid.

How long to store?

How long can you store cheese in the fridge? Everything will depend on its variety and characteristics. In general, the softer the cheese, the less its shelf life, since bacteria spread and multiply much faster in the tender pulp. Hard cheeses can be stored for about 7-10 days.Brine varieties retain their properties for up to two to three weeks. But soft cheese will lie only two or three days, so it is best to eat it as soon as possible.

No neighbors!

If you want to know how to properly store cheese, then remember that such a product is very gentle and therefore does not tolerate "neighbors" on the shelf with strong odors. The porous structure contributes to the fact that cheeses quickly absorb any "flavors", so do not put smoked meat, sausage, fruit, etc. next to it.

And the varieties that assume the presence of mold themselves have a pronounced and rather pungent odor, so it is better to clean them away from other products. In addition, do not place raw foods nearby; numerous pathogenic microorganisms inhabit and multiply in them.

  1. If you find a little mold on hard cheese, then just cut off the affected area and a bit of “healthy” pulp. But this advice does not apply to soft cheeses, in which the fungi that form the mold, spread very quickly.
  2. You should not keep the cheese in the freezer, so it will lose its taste and the best qualities.But if you are going to cook a pizza or another dish and decide to grate the cheese beforehand, then it can be frozen for several hours or days when crushed. So it does not stick together and does not melt.
  3. In order not to mold the cheese, firstly, try to allocate for it a separate shelf, and secondly, keep the refrigerator clean, since any contamination is a direct way to the growth of bacteria and the formation of mold.
  4. It is not necessary to cut off the cheese crust immediately after the purchase, because it is not only quite edible and even tasty, but also protects the cheese from the penetration of pathogenic microorganisms and the spread of mold.
  5. Cut off the cheese only with a clean knife (there may be a lot of bacteria on the surface of the dirty one), then immediately put it back into the package.
  6. If you accidentally spilled the brine in which the cheese was stored, then cook it yourself. To do this, in a glass of clean (preferably boiled) water, dissolve one or two (depending on the salinity of the product itself) tablespoons of salt and place a piece in this solution. And it is better to replace the water with whey (it also needs to be well salted).
  7. If the brine has deteriorated, that is, has become covered with a film or has acquired an unpleasant smell, then it should be replaced with a new one. It is also desirable to cut the top layer of cheese.
  8. In order not to forget when the cheese was bought, put a sticker with the date and name on its package.
  9. Avoid sudden changes in temperature and humidity, they are harmful to cheese.
  10. If you are afraid that the cheese will absorb the extraneous “flavor”, then you can put a few pieces of refined sugar in the package along with it, it perfectly absorbs odors. In addition, it will eliminate moisture, which can lead to the growth of fungi and the formation of mold.
  11. Do not store the cheese in sliced ​​form, it should be cut immediately before serving.
  12. If you do not have the opportunity to select a separate shelf or compartment for storing cheese, then put it in a box with vegetables.
  13. If you need to store cheese outside the refrigerator for some time, then wrap it in a linen or cotton clean cloth dipped in salted water and put it in the coolest and darkest place.
  14. Do not buy a lot of cheese, if you are not sure that you have time to eat it.
  15. You should not tightly and tightly close the container with cheese (unless it is not cheese with a mold and a pungent smell).
