Do you like buckwheat? Or, on the contrary, in your house almost no one eats this useful cereal in its pure form? In any case, be sure to try to cook Greek.

Grechanik is a traditional Ukrainian dish that has already caught the fancy of many, which is some kind of burgers made from buckwheat and from other ingredients, most often from meat (minced or in the form of minced meat).

Option One

Make it easy to prepare and delicious Greek chicken. Required:

  • 500 grams of chicken fillet;
  • 150 grams of buckwheat;
  • 3 eggs;
  • two medium sized bulbs;
  • breadcrumbs or deboning flour;
  • ground pepper and salt to taste;
  • cooking oil for frying;
  • 1.5-2 glasses of water.


  1. Rinse the buckwheat thoroughly so that it is perfectly clean.
  2. Boil grits in lightly salted water (at the rate of one part buckwheat and two or two and a half parts of water) until ready. As a result, it should be completely soft.
  3. Onions need to be cleaned, finely chopped with a knife and fry in oil until transparent.
  4. Wash chicken fillet and either chop it very finely with a knife, or chop it in a meat grinder or in a blender.
  5. In a bowl, combine chopped chicken, cooled buckwheat, fried onions, eggs, as well as pepper and salt. Mix everything well and remember with your hands to get a homogeneous mass.
  6. Heat oil in a pan.
  7. Form breads from buckwheat-chicken mass, roll them in breadcrumbs or flour and fry on each side until golden brown over low heat.

Option Two

Fast and simple Greek can be cooked with minced meat. Here's what it takes:

  • 500 grams of minced meat (it is advisable to use a combination, for example, from beef and pork or pork and chicken);
  • one large onion head;
  • 100 or 150 grams of buckwheat;
  • two eggs;
  • 100 grams of tomato paste;
  • cooking oil for frying;
  • flour for breading;
  • any seasoning and salt to taste.


  1. Buckwheat to boil until cooked. To do this, pour it into the water (about 2.5 glasses), bring to a boil, reduce heat and cook for about 20-25 minutes, stirring occasionally.By the way, do not forget to pre-rinse the cereal.
  2. Next, finely chop the onion and fry it slightly in oil in a pan so that it becomes soft and translucent.
  3. In some container, mix the cooled boiled buckwheat, minced meat, fried onions, eggs, salt and seasonings. As a result, after an active mixing, a uniform thick mass should be obtained.
  4. Form cakes, dip them in flour and fry on both sides literally a couple of minutes.
  5. Then in tomato paste add about a glass of water, add a little salt, mix everything and pour into the pan.
  6. Stew grechaniki in tomato sauce for about 10 minutes without a lid.

Option Three

You can cook lenten Greek with mushrooms.


  • 100 grams of buckwheat;
  • glass of water;
  • 200 grams of fresh champignons;
  • one head of onions;
  • greens (parsley, dill);
  • two eggs;
  • about half a glass of flour;
  • any seasoning and salt.

How to cook?

  1. First, go in for buckwheat. Rinse it thoroughly and boil it in water, after a little salting. When the cereal is soft, you can cover the pan with a lid and leave for about ten minutes so that the buckwheat will finally swell and soften.
  2. Peel the onions and chop finely.
  3. Mushrooms need a good wash and cut (the smaller, the better).
  4. Heat the oil in a skillet, fry the onions on it (about three minutes), then add the mushrooms. On low heat all together roast about 10 minutes. Mushrooms should give juice and significantly reduced in volume.
  5. Wash greens and chop finely.
  6. Mix buckwheat, mushrooms with onions, chopped greens, eggs, salt and seasoning.
  7. Form the Greek grains and fry them on two sides until they are ready.

Option Three

This recipe involves the preparation of some unusual sweet Greek dans with cottage cheese and apples.

You will need:

  • 100 grams of buckwheat;
  • glass of water;
  • 200 grams of cottage cheese;
  • two eggs;
  • 100 ml of milk;
  • two or three tablespoons of sugar;
  • 50 grams of any nuts;
  • two apples;
  • 5 tablespoons of flour;
  • vegetable oil.


  1. Buckwheat groats first, rinse thoroughly (until absolutely clean water) and cook. Water is not necessary to salt!
  2. Peel the apples and rub on a grater.
  3. Now in a bowl, rub cottage cheese with eggs and sugar (you can beat it with a blender), add grated apples, chopped nuts, milk, and chilled buckwheat.After active and thorough mixing you should form a not very thick homogeneous mass.
  4. Heat oil in a skillet.
  5. Form Greek, roll them in flour and fry in butter until golden brown.
  6. Useful, tasty and hearty dessert is ready!

How to serve?

Greek dwellers can be an excellent independent hot dish, since, in fact, there is both a base and a side dish. But it’s best to serve some sauce with them, then they will be even more juicy. For example, you can use tomato sauces, sour cream, garlic and some others. And the Greeks are best served hot.

Some tips


  • Instead of meat, you can use almost any additives, for example, vegetables. Try experimenting with fish or even fruits and berries.
  • You can not fry the Greek in oil, and cook them in the oven. To do this, cover the baking sheet with parchment, pre-soaked it with oil, so that nothing burns.
  • If you cook sweet Greek, then buckwheat can be cooked not on water, but on milk.
  • If the formation of Greek: they fall apart, try to add another egg.
