Hot smoked smokehouse from gas canister
For several years I have wanted to get a spacious smokehouse. I could not afford it because of the high price, and finally decided that the most affordable way would be to make it myself. I chose a pair of old gas cylinders as the main material. Neither I nor my friends who helped me, not professional welders, but having devoted a little time to the cause, we did something absolutely beautiful. Edit: Later I was told that in some countries it is illegal to use gas cylinders for these purposes, as they belong to gas companies. In this situation, as an option, you can use the air receiver of the old compressor or another suitable reservoir.
Removing the smokehouse valve
Unconditionally, the most difficult part of creating a smokehouse is unscrewing the valve.Before starting work, I made sure that there was no gas in the cylinder and after that, having turned off the valve, I left the cylinder for a couple of days outside. You may be lucky and you will solve this problem with a pipe wrench. I did not succeed, so I had to unscrew the valve nut. Something goes easier, but something more complicated. In this case, I had the opportunity to make a large ring wrench with a nearly two-meter handle. When unscrewing, the cylinder was fixed on the workbench with tightening straps.
Check for the absence of gas in the cylinder
After removing the valve, fill the cylinder with water to displace the remaining gas. In order to finally make sure that there is no gas in the form of bubbles, I filled it and emptied it 3 times. Since the tank filled with water is very heavy, I drained the water with hoses.
Cutting the hole for the chimney
The next step is to cut a hole for connecting a chimney with two cylinders.I worked as a hole saw. In order for the hole to be centered on the valve axis, I inserted a bushing that helped to make the preliminary hole. The entire sawing process was rather difficult, because a circular saw of this size regularly jumped out. If I had to do it again, I would use a plasma cutter, or, in the absence of such, a jigsaw.
Cutting out the doorway
Since I have a plasma cutter available, I used it. For smooth cutting along the cylinder, I applied an iron corner, for a transverse one - a metal tape, pressed with a tension strap. If there is no plasma cutter at hand, you can use a "grinder" or an electric jigsaw with a suitable cloth.
Make a chimney draft controller
We need to control the strength of the air / smoke flow through the chimney. We came up with the idea of making a couple of plates with triangular cuts in them. One plate is welded to the chimney, and the other is attached to a short pipe that leads to the top of the main smoke chamber. The plates rotate around the axis, thus the slits in them may or may not coincide. We covered the pipe with a visor. This detail is more for external attractiveness, if, of course, you are not going to smoke something in the rain. Since I needed the plasma cutter for another job, I decided to do everything together. Therefore, in some pictures there is still a grid of grill. It could, of course, be made of reinforcement. We put a similar regulator on the oven door to control the draft of the air.
The connection of the smoke compartment to the oven
I added a pipe of 125 millimeters in length between the stove and the main smoke box.This pipe and the raising of the partition help to prevent the ingress of flames into the smoke compartment. But I set it up so that there is enough space for my welding gun.
We welded 35 mm steel tape around the edge of each door, so when closing, they tightly closed the openings. We planned to add seals in order to better isolate the smoke chamber, but this was not necessary. But since I already bought them, it is possible that I will put them in the future. The hinges were made of steel reinforcement, which were drilled to insert a finger from the bolt into it. They were welded to the steel edging and the base of the smokehouse. The door handles were made of improvised means in the form of a simple lever. Maybe in the future I will wrap them with insulating material if they become very hot. I may use a steel spring.
Remove old paint
Since I planned to leave the smokehouse on the street all year round,she needed a painting. Due to the high temperature of operation, it was necessary to remove the remnants of the old paint. I did this with an angle grinder with a roughing nozzle, and a surface grinding manual machine.
I nailed small iron corners at an angle of 120 degrees for mounting grids. Their number can reach up to four in the smoke chamber and one in the furnace, as a grate. Before painting a little polished and degreased with a smokehouse solvent. If you paint your own, then use heat-resistant paints. I painted only the outer parts with paint, which, according to the description, is intended for grills, and it looks like it keeps up well.
Using a smokehouse
At the moment I had the opportunity to use the smokehouse only a few timesbut I already call the work done successful. It is possible to make only a small fire in it, and it seems that it will last forever, and that is good. But there are a few lessons that I learned: 1. To prevent fat from dripping into the fire, place a tray in the bottom. 2. As expected, the temperature at the bottom is significantly higher than at the top. When preparing the same products, you need to take this into account. 3. The handle gets very hot. 4. Perhaps, for better stability, it is better to use something wider as a stove, although I haven't had any problems with this yet. In the end, I am satisfied with the smokehouse and look forward to next summer to use it again.
